Curried Sweet Potato Chicken Salad

I love chicken salad. But, I have to admit, I'm kind of picky about it. I don't like chicken salad that has chunks. I only like shredded chicken salad. I also don't like chicken salad that has too much mayonnaise in it. You'll notice, this one has none! Feel free to substitute mayonnaise in place of Greek yogurt, if you're a chicken salad purist.

I love to use chicken salad as a vehicle for other veggies, like sweet potatoes and kale. This is a great grab-and-go option, or even serve it for a busy weeknight dinner. Without further ado - curried sweet potato chicken salad.
