Broccoli "Cheddar" Twice Baked Potatoes



Who doesn’t love a twice baked potato? Who doesn’t love broccoli cheddar soup? I love both things, but I’m also trying to steer clear of dairy as much as possible these days. That’s why I took my broccoli “cheddar” sauce and turned it into twice baked potatoes!


It’s a Thanksgiving side dish that is unexpected, good for you, and definitely something a little different from what you would typically see.


The key to this dish is to not overbake the potatoes at either of the bakes.


One of the reasons I love these twice baked potatoes is because it can be prepped ahead of time, so the day of you only have to take about 15 minutes to throw it together. All of the components can be made a day or so ahead of time, and I LOVE a make-ahead side dish! This will allow you to focus only your family on the holiday!
