Autumn Cobb Salad

Now that it’s September, I’m holding onto the warmth of summer, BUT I’m also trying to embrace the flavors of fall. Plus, I adore a good Cobb salad. I decided to create my own version for these warm fall days.
What you will need for this Autumn Cobb Salad:
Salt and pepper - always!
Extra virgin olive oil
Blue cheese
White wine or champagne vinegar
Dijon mustard
Garlic powder
Honey
Butternut Squash
Apples
Hard-boiled eggs
Cooked chicken breast - you could even use a rotisserie chicken to save some time!
Mixed greens - or your lettuce of choice
Bacon slices
Avocado
Pecans
To make this salad:
You’ll want to be sure to make this vinaigrette ahead of time.
Don’t forget to preheat your oven for the squash and apples!
Watch your apples closely! If you cook them too long, you will have chewy, inedible apple chips.
Make this salad ahead of time for a super easy weekday lunch!
