Autumn Cobb Salad



Now that it’s September, I’m holding onto the warmth of summer, BUT I’m also trying to embrace the flavors of fall. Plus, I adore a good Cobb salad. I decided to create my own version for these warm fall days.


What you will need for this Autumn Cobb Salad:


  • Salt and pepper - always!

  • Extra virgin olive oil

  • Blue cheese

  • White wine or champagne vinegar

  • Dijon mustard

  • Garlic powder

  • Honey

  • Butternut Squash

  • Apples

  • Hard-boiled eggs

  • Cooked chicken breast - you could even use a rotisserie chicken to save some time!

  • Mixed greens - or your lettuce of choice

  • Bacon slices

  • Avocado

  • Pecans


To make this salad:


  • You’ll want to be sure to make this vinaigrette ahead of time.

  • Don’t forget to preheat your oven for the squash and apples!

  • Watch your apples closely! If you cook them too long, you will have chewy, inedible apple chips.


Make this salad ahead of time for a super easy weekday lunch!
